Pesto Deconstructed

Ingredients 1 cup raw almonds or walnuts, roughly chopped 2-3 cups basil, roughly chopped 1-2 cloves garlic, minced 1/2-3/4 cup extra-virgin olive oil 1/2 cup grated, fresh parmesan cheese or dry jack cheese Salt & pepper to taste

Preparation

Chop nuts and basil with a knife or use a hand held food chopper for the almonds2 cup olive oil, parmesan, salt and pepperp>

Tomato Bread Salad Recipe

Ingredients

1 pint cherry tomatoes, sliced in half 2 slices artisan bread, cut into cubes > 1 Tablespoon extra-virgin olive oil 1-2 teaspoons balsamic vinegar 1 Tablespoon fresh basil leaves, torn 1 clove garlic, minced Salt & pepper to taste

Preparation

Cut the tomatoes in halfp>

*Note: If not eaten right away, the bread becomes soggyp>

1 basket sungold cherry tomatoes, cut in half 1/2 cup fresh basil, julienned 1 large leek, halved lengthwise and sliced* 1 lb of chicken > 1 TBSP olive oil splash of white wine salt, pepper to taste

Heat olive oil in heavy pan over medium heat and saute chicken until nicely brownedp>
